Coloque o peru em uma vasilha funda,\u00a0<\/span>regue com o tempero batido, acrescente o espumante, a canela, o cravo e misture. Cubra com filme pl\u00e1stico e deixe na\u00a0geladeira por 24 horas, virando na metade do tempo. Para a farofa, derreta a manteiga em uma panela, em fogo m\u00e9dio e\u00a0refogue a cebola e a cenoura por 3 minutos. Adicione o damasco, a castanha, sal, pimenta e misture. Polvilhe a farinha,\u00a0mexendo sem parar at\u00e9 ficar homog\u00eaneo. Retire do fogo, misture cheiro-verde e reserve. Retire o peru da marinada e seque\u00a0com papel absorvente. Recheie com metade da farofa e prenda com palitos ou amarre com barbante.\u00a0Coloque em uma f\u00f4rma grande, espalhe a manteiga com as m\u00e3os e leve ao forno alto, preaquecido, por 30 minutos.\u00a0Abaixe para temperatura m\u00e9dia, regue com o caldo que se formou \u00a0e asse por 1 hora ou at\u00e9 dourar. Retire do forno,\u00a0transfira o peru para uma travessa e coe o molho que se formou na f\u00f4rma. Despeje o molho coado em uma panela, adicione\u00a0o damasco picado, o amido dissolvido na \u00e1gua e leve ao fogo baixo, mexendo sempre, at\u00e9 engrossar. Retire do fogo e, \u00a0se\u00a0necess\u00e1rio, tempere com sal e pimenta.
