Enquanto cozinham, limpe, lave e elimine a parte verde dos alhos-por\u00f3. Corte a parte branca e a mozzarella em fatias muito finas e reserve. Depois de cozidas, escorra as batatas e deixe esfriar, descasque-as e corte-as em fatias com a espessura de 1 cm. Refogue o por\u00f3 em 30 g de manteiga. Unte uma forma refrat\u00e1ria com manteiga, forre com uma camada de fatias de batata, polvilhe com sal e pimenta-do-reino a gosto, cubra com uma camada de mozzarella e sobre esta coloque uma camada de alho-por\u00f3. Repita a opera\u00e7\u00e3o at\u00e9 terminarem todos os ingredientes. A \u00faltima camada deve ser de mozzarella. Pincele toda a superf\u00edcie com a gema ligeiramente batida e distribua em pedacinhos a manteiga restante. Gratine em forno quente, pr\u00e9-aquecido, por 10 minutos.
