Bata os escalopes levemente com o batedor de carne, passe-os na farinha de trigo e doure-os, de ambos os lados, em 30 g de manteiga derretida, aquecida e ligeiramente escura. Regue-os com o vinho branco, polvilhe-os com sal e pimenta-do-reino a gosto, diminua a chama e reduza lentamente o molho do cozimento. Enquanto isso, leve ao fogo uma frigideira com o \u00f3leo e a manteiga restante, adicione as rodelinhas de alho-por\u00f3 e o presunto cortado em cubos. Tempere com sal e pimenta-do-reino a gosto, banhe com um pouco de \u00e1gua e cozinhe, em fogo brando, por 20 minutos.
