Acrescente ao poucos a \u00e1gua at\u00e9 incorporar a farinha. Amasse com as m\u00e3os at\u00e9 obter uma massa bem lisa. Deixe descansar por 30 minutos.<\/p>\n<p style=\"text-align: justify;\"><strong>o recheio<\/strong><\/p>\n<p style=\"text-align: justify;\">Aque\u00e7a 1 colher (sopa) de manteiga e frite os pinnolis ou nozes at\u00e9 que dourem. Retire com uma escumadeira. Junte a manteiga restante. Aque\u00e7a e adicione a carne. Mexa sob fogo forte e frite at\u00e9 que a carne mude de cor. Junte a cebola e frite por mais 10 minutos em fogo baixo com a panela tampada at\u00e9 que a cebola esteja transparente. Junte os temperos e verifique o sabor, corrigindo se necess\u00e1rio. Acrescente os pinollis e deixe esfriar.<\/p>\n<p style=\"text-align: justify;\"><strong>finaliza\u00e7\u00e3o<\/strong><\/p>\n<p style=\"text-align: justify;\">Abra a massa sobre uma superf\u00edcie polvilhada com farinha de trigo. Corte em rodelas de 5 cm de di\u00e2metro. Coloque sobre cada uma delas 1\/2 colher (ch\u00e1) de recheio no centro e dobre ao meio. Aperte bem as bordas. Dobre o pastelzinho em volta do dedo e aperte as duas pontas, dando-lhe o formato de um cappelletti. Coloque em uma assadeira untada e reserve. Coloque o iogurte em uma panela de a\u00e7o inox grande. Misture a maisena com a \u00e1gua. Acrescente ao iogurte a clara e o sal e mexa bem. Junte os cappellettis e leve ao fogo para cozinhar, mexendo de vez em quando, sempre na mesma dire\u00e7\u00e3o, delicadamente, at\u00e9 que os cappellettis estejam cozidos e o molho grosso. Enquanto cozinham, amasse o alho com o sal, aque\u00e7a a manteiga, junte o alho e frite por alguns segundos. Reserve. Quando os cappellettis estiverem cozidos, junte a mistura de alho e manteiga, mexa e retire do fogo.
