Pingue gotas de lim\u00e3o e reserve. Cozinhe o vinho com o caldo de galinha &#8211; bem forte. Junte a cebola, a cenoura, o alho e o louro, bem cortados, e ainda a pimenta, o sal e a salsa picadinha. Deixe ferver por 15 minutos o caldo, passe-o para a ca\u00e7arola de fondue e, uma vez na mesa, mantenha quente sobre o fogareiro. Espete os peda\u00e7os de peixe, os mexilh\u00f5es, os cogumelos com os garfos pr\u00f3prios e deixe-os cozinhar por 2 minutos no caldo. Sirva com molhos e p\u00e3o franc\u00eas cortado em fatias. Finalmente, pode-se juntar os cogumelos que sobrarem e um pouco mais de salsa.
